Nourishing the body with raw foods provides a steady stream of protective antioxidants. Lycopene, a bright red carotenoid antioxidant, is particularly effective against free radical damage and UV-induced effects such as photo-aging, oxidative stress and mitochondrial DNA damage. In other words, lycopene can help protect us from sunburn, smooth our skin and reverse some of the aging effects of sun exposure; all while giving the skin that "healthy glow".
Foods high in lycopene include: watermelon, tomatoes, papaya, pink guava, red bell peppers and pink grapefruit. Watermelon is especially rich in lycopene, containing 40% more lycopene than tomatoes. Lycopene is more easily absorbed by the body when accompanied by a small amount of fat.

WATERMELON GAZPACHO!
1 Cup blended watermelon
1/4 Cup chopped, fresh cilantro
1 Tbsp chopped, fresh basil
1 Tbsp chopped, fresh mint
1/3 Cup chopped green onions
1/3 tsp salt
1 pinch ground pepper
1/4 tsp Thai chili, finely chopped (optional - very spicy! And helps keep you cool.)
1/4 tsp minced ginger
1/3 Cup diced watermelon
1/3 Cup diced & seeded tomato
1/3 Cup diced cucumber
1/4 Cup lime juice
1/3 Cup avocado cubed, place on top (optional)
1 Tbsp coconut nectar (optional)
Garnish:
1tsp fennel greens
Method:
Place all of the ingredients into a large bowl, stir well.
Serve in ramekins or baby watermelon halves. Enjoy!
